Just Like Mummy's Iced and Spiced cookies

It's season of love!!!! and although everyday should be a day to celebrate love, I think February 14th is a good day for a public declaration lol.

So, you've got the card, a gift...items you've brought year in, year out but STOP!!! Why not wow your loved one by going the extra mile and bake some heart shaped iced and spiced cookies.


By now, you've probably watched our first episode on Youtube (and you if haven't don't worry, it's at the bottom of the page); the first of our three part Valentine's day specials - iced and spiced cookies.

These cookies - all biscuits as they say in good ol' blighty, are deliciously buttery and moorish.  With a hardened exterior and a soft, crumbly centre, these cookies will not taste bland nor dry - I think it's due to the additional flavouring.  It's a super easy recipe and so versatile it can be made for any occasion, so let's get baking!


Ingredients

To make about 15 - 20 cookies you will need the following ingredients:

  • 100g softened unsalted butter
  • 100g white sugar
  • 1 medium egg
  • 275g of plain flour
  • 1tsp mixed spice
  • 1tsp vanilla extract


1. First, you need to cream together the butter, which has been softened at room temperature, and sugar.  I tend to you granulated sugar, but you can also use caster sugar if you want a finer crumb.  I would avoid using brown sugar for this recipe as it totally changes the consistency.

2.  In a clean, dry bowl, mix together the plain flour and mixed spice  For best results sieve together to get rid of any lumps.

3. Once the sugar and butter is combined together add the vanilla. You could however intensify these cookies by also adding 1tsp of freshly squeezed lemon juice, 1tsp of freshly squeezed orange juice as well as the rind of half a lemon and an orange.

4. When the mixture is pale in colour add the egg - also at room temperature.  Then mix in the flour.  Your dough will be a soft ball at this stage.  If it's too sticky add a little bit more flour.

5. Now, you're almost ready to bake. But first it's chilling time!  Grab a baking tin and line it with greaseproof paper or baking paper or parchment paper - you will need two pieces.  Place the first piece on the tin then pat the dough, flattening with your hands.

Then place another piece of paper on top.  Here's a Just Like Mummy's tip - using a rolling pin, roll the dough between the two sheets of greaseproof paper.  This stops the dough from sticking to your rolling pin and the remedy of adding more flour.  Once you have rolled the dough to about half a cm in thickness, pop the tray into the fridge for 15 - 20 mins to firm.

6. At this point preheat the oven to 180°C or gas mark 5.  Once the dough has firm use a cookie cutter and cut out your heart shapes. Place them on another lined baking tin, leaving about an inch space between them. Bake in the oven for about 12-15 minutes turning the tray halfway.  You want to bring them out of the oven just as the edges are turning golden brown.

7. After 5 mins transfer the cookies onto a wire rack to cool some more.

At this point, these cookies also taste delicious lightly dusted with sugar or icing sugar. However you can continue to ice them.

To ice, I'm using ready rolled red sugar-paste, brought from a large supermarket or specialist cake decorating store.  Simply dust your work surface with icing sugar and roll the sugar-paste with a rolling pin until it's about a £1 in thickness.  Using a pastry brush and some boiled water, brush some water over your cookie. Use the cutter and cut out a lovely heart shape and stick - et viola! Your iced and spiced valentines day cookies baked Just Like Mummy's




They taste delicious with a cup of tea or a glass of bubbly too!

It's all about the flavour!

So he's finally popped the question, congratulations! Having spent days/weeks/months glaring and beaming at your ring, it's time to start planning and I'm here to talk cake!

Choosing your wedding cake is such an exciting thing and is also a fun and wonderful experience to share with your partner, bridesmaids or family members.  What is really important is to remember that it is YOUR day and really there are no rules as to how you want your wedding cake to look like or taste.  During my consultations I like to focus on the couple and incorporate aspects of them - what are their favourite cake flavours? What moments and memories would they to share with their guests? What flavours represent their joint journey of life they are about to embark?

Modern vs Traditional

So what flavour should you go for?  In recent times many couples are moving away from the traditional fruitcake or "Black" cake - but these cakes remain my fave! Fruitcakes infused with copious amounts of alcohol are still a popular choice as the top tier would be saved for the christening of the first child.  And as alcohol acts as a preservative - they can last up to a year - with good and careful storage of course.


However modern couples are opting for tiered cakes, each with differing flavours.  This offers variety to your guests and enables you to have a bit of what you fancy on your big day! 

We at Just Like Mummy's offer over 30 different and great tasting cake flavours which all taste delicious! There is soooo much to chose from but we like to categorise our cakes into the following:


Sponge cakes - these are staple cakes such as Victoria sponge, Madeira, Nigerian sponge, Lemon or marble cakes.  Very traditional and are definitely a crowd pleaser.  Sponge cakes can also be given a bit of a twist such as our vanilla and strawberry swirl cake.



Chocolate cakes - Double chocolate fudge, White chocolate and raspberry, Chocolate Orange - the list is endless!  These are definitely for the chocolate connoisseurs are may not suit everyone's palate - but are totally decadently rich.




Red Velvets - definitely in a category of its own! Usually filled with lashings of cream cheese frosting, red velvet can also with filled with vanilla buttercream and even crushed Oreos.  I'm loving the new Just Like Mummy's of incorporating your wedding colours into your cake such as a blue velvet cake or a purple velvet cake.

Fruit cakes -  These gorgeous cakes come in many different varieties - such as a Strawberry and Pink Champagne, Banana and salted caramel or traditional fruit or a Caribbean black cake.  




Cocktail hour - A great way to show your fun side into your wedding cake.  These flavours include Baileys cake, Malibu cake - Coconut and rum cake, Mojito cake - a peppermint and lemon rum cake.




On 1st May 2016 Just Like Mummy's had our first cake tasting experience day where guests were invited to try just some of the available flavours on offer.  It was an amazing day and we were so pleased with just how much people enjoyed the samples.

2016 you have been fabulous!

As we prepare for a brand new year, a simple scroll through my social media pages placed a huge smile on my face.  I was filled with pleasant memories; reminded of how each cake played a role in capturing a moment in an individual's celebratory occasion. From weddings to birthdays, a cake was cut, eaten and captured photographically. A smile was created.  Whoever said said that a cake is just butter, eggs and flour was so wrong!!!

So in sharing with you all just how fabulous this year has been, I decided to compile a list of my favourite Just Like Mummy's cake creations. Mehnn it was so hard! Every cake creation has such a unique meaning to me. Nothing is ever insignificant and nothing, absolutely nothing is just a cake! lol But here is is, my top ten cake creations for 2016.  Feel free to leave a comment below.


10) Macarons 

So I've finally caught the macaron craze. These are so moorish and I have loved finding new ways of incorporating them into my cakey creations.  Only a fellow baker would understand the accomplishment in creating the perfect macaron - I shall soon upload my receipe here. But for the moment, let's marvel at this beautiful creation called a macaron.


9) Rustic Love



We were lucky to have a glorious weather this summer - ok, on some days - and a few clients opted for buttercream cakes rather than a traditionally iced cake.  There's no need to fear of melting when the right buttercream - Italian meringue of course -  is used. Buttercream cakes also look fantastic when paired with fresh flowers.


8) From Barbados With Love



This wedding cake was the first cake of 2016 and was exceptionally special as it was for a destination wedding all the way in sunny Barbados!  I loved hearing about a true life love story during our consultation and the family were absolutely adorable.  We had three weeks to plan and execute how to bake and decorate four tiers of rum cake, vanilla sponge and red-velvet cake so it can be packed safely and carried in heavy-duty boxes for hand luggage.  It was achieved and the family assembled the cakes themselves.  Hopefully in 2017 I shall be travelling along with the cake - the Maldives are lovely I hear. 


7) Fit for a princess


I love working with clients who know exactly what they want and Kyra's mum was so meticulous and her attention to detail was spectacular.  She trusted my judgements and expertise and together this fantastic birthday cake was created.  Why I love this cake is that it could easily pass for a wedding cake - and that is what I love about Just Like Mummy's. There is transparency in our pricing.  We do not hike up our prices when we hear the word "wedding".  You pay for quality ingredients, a quality service, flawless finish and an amazing and great tasting cake.  I just loved decorating this cake - there truly is something therapeutic in creating ruffles!


6) Building Empires




At number six we have THIS particular box of cupcakes.  Yes they are an extremely cute box of baby shower cupcakes - however this picture made the list for what it stands for.  You know, it is always scaring making things for other industry colleagues.  But when they trust you to be part of their own personal lives and special occasions, it is truly an amazing feeling.  The owner of LoveWeddingsNg ordered this box for her friend and not only did she support my business, she shared it on her personal business page where over 600 people liked my work.  So humbling. This moment made me realise the joy in empowering others and supporting each other.


5) Drip Galore

     
 


So it appears that this trend is here to stay and was definitely a firm favourite this year. So versatile and can be used on all cake mediums.  Drip cakes are fun and easy to create and can be topped with all manner of edible favourites - I'm currently on team Macarons and can't get enough of them!


4) Five Little Monkeys

 
At number 4 is this cake beauty! You can only imagine just how fun it was to make this three tiered birthday cake for a special 1 year old.  I just love modelling figures out of gum-paste.

3) Quintessentially English



So number three isn't really about the cake (despite how ridiculously gorgeous it is); it has made the top ten due to what it symbolises to me.  This was the first time in which just Like Mummy's was asked to be part of a style shoot for the Creme de la Bride digital publication.  Seeing my cakes in the magazine was such an amazing feeling and I got to meet with some amazing vendors too.



2) A baby is on the way


Our second favourite cake of the 2016 is the baby changing bag cake. By far one of our most popular baby shower cakes we have created to date.  The joy of this cake is that it can be used as a gender reveal cake for your guests.  When I received the video from my client it actually brought a tear to my eye, she loved it! A mother-to-be told me that her guests actually thought that the changing bag was real - such good sign!


1) African Queen



I was so touched by the love story of the bride and groom during our consultation. Their love for each other was clear to see and I couldn't wait to be part of their big day.  They gave me the colour theme and gave me permission to do anything that I wanted.  The creative juices began to flow and this was the end result.  


So there you have it! My favourite cakes for 2016.  I'm so excited to see what 2017 brings my way.  Thank you to all my customers and supporters and here's to another year of AMAZING cakes from Just Like Mummy's
